Car is cooling down on down hills?

Hello there and happy new year. A week ago, I noticed that my car is cooling down when driving on down slides. It goes back to normal temperature when on level terrain or uphill. I suspect it's just a thermostat, but I wanted to ask you guys first. Also, any tips on replacing the thermostat would be appreciated. Thank you in advance.

Thank you. I was wondering if I need to get some kind of gasket for the thermostat, the new part does say that it comes with a seal, does that work like a gasket for it?

Yes is does, it might be rubber which needs no sealant just make sure the sealing surfaces are clean.

Also, all the new thermostat says it opens at 82 degrees and I was wondering if that's alright?
