2005 Mercury Sable idle issues,

main complaint is intermittent stalling, noticed idles 750 rpm but when ac disengages sometimes idle drops to near stall and or hunts, surges for a bit. also noticed during acceleration, once you let off accel the rpm stays where it was at for 2 to 3 seconds then drops down to normal idle conditions, have had the iac valve serviced, but these symptoms are still there, my repair shop cant seem to recreate them nor fix this issue, any ideas, help ?

The IAC is my first guess. They really can't be serviced. As far as the idle issue, the IAC is designed to increase the idle with the AC engaged and lower it when it is off. Have that double checked to make sure it is working properly. Also, check to make sure there are no vacuum leaks on the engine.
