engine will stall and restart no problem until oil light comes on

It sounds like you have a faulty oil pressure sensor.
As you only experience the issue when the oil pressure light is on, then the culprit should be that sensor.
The oil pressure sensor is located on the back part of the engine (if you are facing the engine with the hood open), just below the exhaust manifold.

Since the intermittent nature of this issue you might even have a loose connector to the sensor. Do check the connector for any corrosion or loose wire.
