I have a 2002 Dodge Ram 360 v8. I want to put dual exhaust on to reduce back pressure and hopefully sightly increase fuel economy. The exhaust shop told me they could not put true duals on because this truck has only one catalytic converter. Is there a way to do this without hurting fuel economy

I have to start by saying we only recommend direct fit parts. Can you do it, yes it can be done with headers. They make kits for dual exhaust for the vehicle. It will come with the required O2 sensors and components needed. Like I said, the vehicle wasn't designed for this.
