When I open the bonnet first thing the water level in the reservoir is right down. When I start the engine it comes up and completely fills the container and starts bubbling. The heater works ok so I have been told it could be the gasket?

I would be getting a head check done, this is a simple chemical test to see if there is Co in the cooling system, if so you will have a head gasket problem, most work shops can do this test.
