What causes my truck to over heat in cold temps

If it only happens in cold temps, check the coolant to make sure the freezing point is at least -45 F. What often happens is this. The coolant is weak. When you drive, the air flow through the radiator is actually colder than the ambient temp. As a result, the coolant can begin to gel or freeze causing lack of circulation. Remember, the wind chill is always colder than the actual ambient temp.
