1990 chevy 1500 keeps over heating and then cools back down while driving

Check to make sure the coolant is full. If it is, try replacing the thermostat. It could be sticking. If that doesn't help, flush the cooling system. Actually, flush the cooling system when replacing the thermostat. You will already have the coolant out.
