Car overheating

I have an 82 Toyota Celica Gt with a 25 RE engine, It came with no thermostat and when I installed one it began to get hot, from flat cold to the red end of the heat gauge in about 7 mins. The shop said everything checks out and there are co2 bubbles leaking into the coolant. Suggestion was that the head come off and be examined. So my question is what does all this entail? My shop is very good I just don't have the cash to fix it right now. Currently I am driving it with no thermostat and the engine only heats to halfway on the gauge and stays there.

I have a 90 tempo that does the same thing. I suspect the radiator is not cooling efficiently. The extra flow of the missing thermo makes up for this deficiency. I'm content to leave it as is.
