I have a 1998 buick century. The steering wheel moves in my hand while driving. Also, at 35 mph I hear a knocking in the front end and also around 60 mph. Could it be the car is out of alignment?

This is not an alignment problem. There is too much slack in the steering system and problem could be due to wear to steering linkages. You need to check them and replace as necessary. For steering component repairs, an alignment is required after repairs.
